Cast Iron

Old school. Heavy. Reactive.

Nothing sears better. But it's heavy, it rusts, it needs constant seasoning, and food still sticks.

It also leaches iron into your food, and iron accumulates in the body over time. For most adults a little is fine. Every meal, every day, is more than the body has any way to clear. Great once in a while. Not great as your everyday pan.

Stainless Steel

The professional's pan. Also an alloy.

Genuinely non-toxic option, and it deserves that. It's tough, it sears, it lasts decades. Although it isn't non-stick, you need a lot of oil and perfect technique just to stop food gluing & burning itself to the surface.

The biggest drawback is that it isn't one metal. It's an alloy, with nickel and chromium heavy metals inside it. Cook something acidic - tomatoes, vinegar, citrus - and heat pulls them out into the food, which has its own kidney, liver & immune system damage risks.

So what do I actually cook on at home, for my own family? The one material that isn't a coating and isn't an alloy that leaches heavy metals?
