Most traditional bakeware relies either on chemical coatings to prevent sticking or on reactive metals like aluminum and lower-grade steel. Non-stick trays use synthetic coatings that scratch, peel, and can release fumes when overheated.
Aluminum can react with acidic foods and warp under high heat. Stainless steel is stronger but may leach trace metals in certain conditions and is not fully inert. Ceramic-coated trays still depend on a surface layer that chips and degrades over time.
